HERMIONE’S MARKET JUICE
Long before Hermione’s mustard greens connected us, I was attracted to her stand for her wheatgrass juice shots. In 2011, juice bars were unheard of in Paris. Most restaurants only made the typical fresh-pressed orange juice, and finding someone doing a green juice was like trying to find kale—nearly impossible. Hermione once told me that other vendors at the market were convinced that she was selling something alcoholic, because they couldn’t fathom the idea of a small paper cup of green juice selling so well. Juice recipes are really all about trying new combinations to see what flavors you like best. This recipe is a simple base that is written with experimentation in mind. Try adding cucumber, spinach, or lime juice. Play around with fennel or celery. My only recommendation is to keep it green!
INGREDIENTS
•3 to 4 cups (125 g) kale, washed (stems intact)*
•1 large handful spinach (4 ounces/100 g)
•1 apple, stem removed
•1 (2 to 3-inch/5 to 7 1/2-cm) piece fresh ginger
•Juice from 1/2 lemon
PREPARATION
Add all ingredients to a juicer, juice, and serve chilled.
YIELD
•1 cup (240 ml)
*Kale stems juice really well. If you are an avid juicer, save any stems you are not cooking with for juicing later.
